Combustion, or burning, is a high-temperature exothermic redox chemical reaction between a fuel (the reductant) and an oxidant, usually atmospheric oxygen, that produces oxidized, often gaseous products, in a mixture termed as smoke. Combustion does not always result in fire, because a flame is only visible when substances undergoing combustion vaporize, but when it does, a flame is a characteristic indicator of the reaction. While activation energy must be supplied to initiate combustion (e.g., using a lit match to light a fire), the heat from a flame may provide enough energy to make the reaction self-sustaining. The study of combustion is known as combustion science.

Combustion is often a complicated sequence of elementary radical reactions. Solid fuels, such as wood and coal, first undergo endothermic pyrolysis to produce gaseous fuels whose combustion then supplies the heat required to produce more of them. Combustion is often hot enough that incandescent light in the form of either glowing or a flame is produced. A simple example can be seen in the combustion of hydrogen and oxygen into water vapor, a reaction which is commonly used to fuel rocket engines. A coal-seam fire is a burning of an outcrop or underground coal seam. Most coal-seam fires exhibit smouldering combustion, particularly underground coal-seam fires, because of limited atmospheric oxygen availability. Coal-seam fire instances on Earth date back several million years. Due to thermal insulation and the avoidance of rain/snow extinguishment by the crust, underground coal-seam fires are the most persistent fires on Earth and can burn for thousands of years, like Burning Mountain in Australia. Coal-seam fires can be ignited by self-heating of low-temperature oxidation, lightning, wildfires and even arson. Coal-seam fires have been slowly shaping the lithosphere and changing atmosphere, but this pace has become faster and more extensive in modern times, triggered by mining.

Coal fires are a serious health and safety hazard, affecting the environment by releasing toxic fumes; reigniting grass, brush, or forest fires; and causing subsidence of surface infrastructure such as roads, railways, pipelines, electric lines, bridge supports, buildings, and homes. Whether started by humans or by natural causes, coal-seam fires continue to burn for decades, centuries, or even millennia, until one of the following occurs: either the fuel source is exhausted, a permanent groundwater table is encountered, the depth of the burn becomes greater than the ground's capacity to subside and vent, or humans intervene. Because they burn underground, coal-seam fires are extremely difficult and costly to extinguish, and are unlikely to be suppressed by rainfall. There are strong similarities between coal fires and peat fires.

Smouldering in the context of Ember

An ember, also called a hot coal, is a hot lump of smouldering solid fuel, typically glowing, composed of greatly heated wood, coal, or other carbon-based material. Embers (hot coals) can exist within, remain after, or sometimes precede, a fire. Embers are, in some cases, as hot as the fire which created them. They radiate a substantial amount of heat long after the fire has been extinguished, and if not taken care of properly can rekindle a fire that is thought to be completely extinguished and can pose a fire hazard. In order to avoid the danger of accidentally spreading a fire, many campers pour water on the embers or cover them in dirt. Alternatively, embers can be used to relight a fire after it has gone out without the need to rebuild the fire – in a conventional fireplace, a fire can easily be relit up to 12 hours after it goes out, provided that there is enough space for air to circulate between the embers and the introduced fuel.

They are often used for cooking, such as in charcoal barbecues. This is because embers radiate a more consistent form of heat, as opposed to an open fire, which is constantly changing along with the heat it radiates.

An earth oven, ground oven or cooking pit is one of the simplest and most ancient cooking structures. The earliest known earth oven was discovered in Central Europe and dated to 29,000 BC. At its most basic, an earth oven is a pit in the ground used to trap heat and bake, smoke, or steam food. Earth ovens have been used in many places and cultures in the past, and the presence of such cooking pits is a key sign of human settlement often sought by archaeologists. Earth ovens remain a common tool for cooking large quantities of food where no equipment is available. They have been used in various civilizations around the world and are still commonly found in the Pacific region to date.

To bake food, the fire is built, then allowed to burn down to a smoulder. The food is then placed in the oven and covered. This covered area can be used to bake bread or other various items. Steaming food in an earth oven covers a similar process. Fire-heated rocks are put into a pit and are covered with green vegetation to add moisture and large quantities of food. More green vegetation and sometimes water are then added, if more moisture is needed. Finally, a covering of earth is added over everything. The food in the pit can take up to several hours to a full day to cook, regardless of the dry or wet method used.
