Flammekueche (Alsatian), Flammkuchen (Standard German), or tarte flambée (French), is a speciality of the region of Alsace, German-speaking Moselle, Baden and the Palatinate. It is composed of bread dough rolled out very thinly in the shape of a rectangle or oval, which is covered with fromage blanc or crème fraîche, thinly sliced onions and lardons.

The name of the dish varies in local dialects: it is called Flàmmeküeche, or Flàmmaküacha in Alsatian, or Flammkuche in Lorraine Franconian (compare Standard German Flammkuchen). All these names translate as "(pie) baked in the flames". In Alsace, the French name tarte flambée is the most common name for the dish, while it is known as its Alsatian name "flammekueche" in the rest of France. Contrary to what literal translation would suggest, 'tarte flambée' is not flambéed, but cooked in a wood-fired oven.

Rhenish Franconian or Rhine Franconian (German: Rheinfränkisch [ˈʁaɪnfʁɛnkɪʃ] ) is a dialect chain of West Central German. It comprises the varieties of German spoken across the western regions of the states of Saarland, Rhineland-Palatinate, northwest Baden-Württemberg, and Hesse in Germany. It is also spoken in northeast France, in the eastern part of the département of Moselle in the Lorraine region, and in the north-west part of Bas-Rhin in Alsace. To the north, it is bounded by the Sankt Goar line (or das–dat line) which separates it from Moselle Franconian; to the south, it is bounded by the Main line which is also referred to as the Speyer line which separates it from the Upper German dialects.

Bitche (English pronunciation: /btʃ/ BEECH, French: [bitʃ]; German and Lorraine Franconian: Bitsch) is a commune in Moselle department, in the region of Grand Est in northeastern France. It is the Pays de Bitche's capital city, and the seat of the Canton of Bitche and the Pays de Bitche community of communes.

The town belongs to the Northern Vosges Regional Nature Park and is rated four-flowers in the towns and villages in bloom competition. The town's population at the 2013 census was 5,225. The inhabitants of the commune are known as Bitchois and Bitchoises.
