Tequila (/təˈklə/; Spanish: [teˈkila] ) is a distilled beverage made from the blue agave plant, primarily in the area surrounding the city of Tequila 65 km (40 mi) northwest of Guadalajara, and in the Jaliscan Highlands (Los Altos de Jalisco) of the central western Mexican state of Jalisco.

The red volcanic soils in the region of Tequila are well suited for growing the blue agave, and more than 300 million plants are harvested there each year. Agave grows differently depending on the region. Blue agaves grown in the highlands Los Altos region are larger and sweeter in aroma and taste. Agaves harvested in the valley region have a more herbaceous fragrance and flavor. Due to its historical and cultural importance, the region near Tequila was declared a UNESCO World Heritage Site in 2006, the Agave Landscape and Ancient Industrial Facilities of Tequila.

Liquor (/ˈlɪkər/ LIK-ər, sometimes hard liquor), spirits, distilled spirits, or spiritous liquor are alcoholic drinks produced by the distillation of grains, fruits, vegetables, or sugar that have already gone through alcoholic fermentation. While the word liquor ordinarily refers to distilled alcoholic spirits rather than drinks produced by fermentation alone, it can sometimes be used more broadly to refer to any alcoholic beverage (or even non-alcoholic ones produced by distillation or some other practices, such as the brewed liquor of a tea).

The distillation process concentrates the alcohol, so the resulting condensate has an increased alcohol by volume. As liquors contain significantly more alcohol (ethanol) than other alcoholic drinks, they are considered "harder". In North America, the term hard liquor is sometimes used to distinguish distilled alcoholic drinks from non-distilled ones, whereas the term spirits is more commonly used in the United Kingdom. Some examples of liquors include vodka, rum, gin and tequila. Liquors are often aged in barrels, such as for the production of brandy and whiskey, or are infused with flavorings to form flavored liquors, such as absinthe.

Jalisco, officially the Free and Sovereign State of Jalisco, is one of the 31 states which, along with Mexico City, comprise the 32 Federal Entities of Mexico. It is located in western Mexico and is bordered by six states, Nayarit, Zacatecas, Aguascalientes, Guanajuato, Michoacán, and Colima. The Altos de Jalisco, or the Jaliscan Highlands, is a geographic and cultural region in the eastern part of the Mexican state of Jalisco, famed as a bastion of Mexican culture, cradling traditions from Tequila production to Charrería equestrianism. Los Altos are part of the greater Bajío (The Lowlands) region of Mexico.

The Altos are primarily a rural or semi-rural region, known for its towns of historic Mexican colonial architecture, deep Catholic conservatism and numerous Mexican traditions such as equestrianism, mariachi music, tequila production, and traditional Mexican dances and festivals. A significant portion of the population consists of Mexicans of European descent, primarily from the criollos of Castillian, Extremaduran, Galician, Basque, and Andalusian origin, but also from early Portuguese, Italian and Sephardic Jews settlers and later immigrants from other parts of Europe.

Flavored liquors (also called infused liquors) are liquors that have added flavoring and, in some cases, a small amount of added sugar. They are distinct from liqueurs in that liqueurs have a high sugar content and may also contain glycerine.

Tequila in the context of Mexican wine

Mexican wine and wine making began with the arrival of the Spanish in the 16th century, when they brought vines from Europe to modern day Mexico, the oldest wine-growing region in the Americas. Although there were indigenous grapes before the Spanish conquest, the Spaniards found that Spanish grapevines also did very well in the colony of New Spain (Mexico) and by the 17th century wine exports from Spain to the New World fell. In 1699, Charles II of Spain prohibited wine making in Mexico, with the exception of wine for Church purposes. From then until Mexico’s Independence, wine was produced in Mexico only on a small scale.

After Independence, wine making for personal purposes was no longer prohibited and production rose, especially in the late 19th and early 20th centuries. Many other European immigrant groups helped with the comeback of wine in Mexico. However, the Mexican Revolution set back wine production, especially in the north of the country. Wine production in Mexico has been rising in both quantity and quality since the 1980s, although competition from foreign wines and 40% tax on the product makes competing difficult within Mexico. Mexico is not traditionally a wine-drinking country, but rather prefers beer, tequila and mezcal. Interest in Mexican wine, especially in the major cities and tourists areas (along with the introduction into the US on a small scale), has grown along with Mexican wines’ reputation throughout the world. Many Mexican companies have received numerous awards. Various wine producers from Mexico have won international awards for their products. In 2020, the wine Don Leo Gran Reserva Cabernet Sauvignon won gold in the International Cabernet competition (CIDC) and the trophy for the world's best Cabernet. The wine is produced in Parras, Coahuila in the Northwestern region of Mexico.
