A surfactant is a chemical compound that decreases the surface tension or interfacial tension between two liquids, a liquid and a gas, or a liquid and a solid. The word surfactant is a blend of "surface-active agent", coined in 1950. As they consist of a water-repellent and a water-attracting part, they are emulsifiers, enabling water and oil to mix. They can also form foam, and facilitate the detachment of dirt.

Surfactants are among the most widespread and commercially important chemicals. Private households as well as many industries use them in large quantities as detergents and cleaning agents, but also as emulsifiers, wetting agents, foaming agents, antistatic additives, and dispersants.

Surfactants in the context of Speciality chemicals

Specialty chemicals (also called specialties or effect chemicals) are particular chemical products that provide a wide variety of effects on which many other industry sectors rely. Some of the categories of speciality chemicals are adhesives, agrichemicals, cleaning materials, colors, cosmetic additives, construction chemicals, elastomers, flavors, food additives, fragrances, industrial gases, lubricants, paints, polymers, surfactants, and textile auxiliaries. Other industrial sectors such as automotive, aerospace, food, cosmetics, agriculture, manufacturing, and textiles are highly dependent on such products.

Speciality chemicals are materials used on the basis of their performance or function. Consequently, in addition to "effect" chemicals they are sometimes referred to as "performance" chemicals or "formulation" chemicals. They can be unique molecules or mixtures of molecules known as formulations. The physical and chemical characteristics of the single molecules or the formulated mixtures of molecules and the composition of the mixtures influences the performance end product. In commercial applications the companies providing these products more often than not provide targeted customer service to innovative individual technical solutions for their customers. This is a differentiating component of the service provided by speciality chemical producers when they are compared to the other sub-sectors of the chemical industry such as fine chemicals, commodity chemicals, petrochemicals and pharmaceuticals.

Surfactants in the context of Diglyceride

A diglyceride, or diacylglycerol (DAG), is a glyceride consisting of two fatty acid chains covalently bonded to a glycerol molecule through ester linkages. Two possible forms exist, 1,2-diacylglycerols and 1,3-diacylglycerols. Diglycerides are natural components of food fats, though minor in comparison to triglycerides. DAGs can act as surfactants and are commonly used as emulsifiers in processed foods. DAG-enriched oil (particularly 1,3-DAG) has been investigated extensively as a fat substitute due to its ability to suppress the accumulation of body fat; with total annual sales of approximately USD 200 million in Japan since its introduction in the late 1990s till 2009.

In chemistry, an amphiphile (from Greek αμφις (amphis) 'both' and φιλíα (philia) 'love, friendship'), or amphipath, is a chemical compound possessing both hydrophilic (water-loving, polar) and lipophilic (fat-loving, nonpolar) properties. Such a compound is called amphiphilic or amphipathic. Amphiphilic compounds include surfactants and detergents. The phospholipid amphiphiles are the major structural component of cell membranes.

Amphiphiles are the basis for a number of areas of research in chemistry and biochemistry, notably that of lipid polymorphism.
