Many species of fish are caught by humans and consumed as food in virtually all regions around the world. Their meat has been an important dietary source of protein and other nutrients in the human diet.

The English language does not have a special culinary name for food prepared from fish like with other animals (as with pig vs. pork), or as in other languages (such as Spanish pez vs. pescado). In culinary and fishery contexts, fish may include so-called shellfish such as molluscs, crustaceans, and echinoderms; but, more expansively, seafood covers both fish and other marine life used as food.

Food fish in the context of Centrarchidae

Centrarchidae, better known as sunfishes or centrarchids, is a family of freshwater ray-finned fish belonging to the order Centrarchiformes, native only to North America. There are eight universally included genera within the centrarchid family: Lepomis (true sunfishes), Micropterus (black basses), Pomoxis (crappies), Enneacanthus (banded sunfishes), Centrarchus (type genus, consisting solely of the flier C. macropterus), Archoplites (Sacramento perch), Ambloplites (rock basses), and Acantharchus (mud sunfish). Their closest relatives are the pygmy sunfishes of the family Elassomatidae, which are sometimes placed in the same family, although presently treated as distinct.

The centrarchid family comprises 38 identified species, 34 of which are extant. It includes many popular game fishes familiar to North American anglers, such as the rock bass, largemouth bass, bluegill, pumpkinseed, green sunfish and crappies. Most sunfish are highly valued panfish for sport fishing, and have been introduced in many areas outside their native ranges, sometimes becoming invasive species. While edible, they are not commercially marketed as food fish.

Food fish in the context of Salmo

Salmo is a genus of ray-finned fish from the subfamily Salmoninae of family Salmonidae, and is part of the tribe Salmonini along with the sister genera Salvelinus and Salvethymus. Almost all Salmo species are native only in the Old World (including most of Europe, coastal North Africa and part of West Asia around the Black Sea), the only exception being the Atlantic salmon (Salmo salar), which is also naturally found across the North Atlantic in eastern North America.

The number of distinct species and subspecies in Salmo is a debated issue. The Atlantic salmon and brown trout (Salmo trutta) are widespread species and have been introduced worldwide as farmed food fish or recreational game fish, while most of the other Salmo species are narrowly distributed forms endemic to single watersheds.

The term carp (pl.: carp) is a generic common name for numerous species of freshwater fish from the family Cyprinidae, a very large clade of ray-finned fish mostly native to Eurasia. While carp are prized quarries and are valued (even commercially cultivated) as both food and ornamental fish in many parts of the Old World, they are considered trash fish and invasive pests in many parts of Africa, Australia and most of the United States.

The mackerel, tuna, and bonito family, Scombridae, includes many of the most important and familiar food fishes. The family consists of 51 species in 15 genera and two subfamilies. All species are in the subfamily Scombrinae, except the butterfly kingfish, which is the sole member of subfamily Gasterochismatinae.

Scombrids have two dorsal fins and a series of finlets behind the rear dorsal fin and anal fin. The caudal fin is strongly divided and rigid, with a slender, ridged base. The first (spiny) dorsal fin and the pelvic fins are normally retracted into body grooves. Species lengths vary from the 20 cm (8 in) of the island mackerel to the 4.58 m (15 ft 12 in) recorded for the immense Atlantic bluefin tuna.

Clupeiformes /ˈklpɪfɔːrmz/ is the order of ray-finned fish that includes the herring family, Clupeidae, and the anchovy family, Engraulidae and sardines. The group includes many of the most important forage and food fish.

Clupeiformes are physostomes, which means that their gas bladder has a pneumatic duct connecting it to the gut. They typically lack a lateral line, but still have the eyes, fins and scales that are common to most fish, though not all fish have these attributes. They are generally silvery fish with streamlined, spindle-shaped bodies, and they often school. Most species eat plankton which they filter from the water with their gill rakers.

Micropterus is a genus of North American freshwater fish collectively known as the black bass, which belong to the sunfish family Centrarchidae of order Centrarchiformes. They are sometimes erroneously called "black trout", but the name trout more correctly refers to certain potamodromous members of the family Salmonidae (order Salmoniformes).

Micropterus are widely distributed east of the Rocky Mountains, from the Hudson Bay basin in Canada to northeastern Mexico. Several species, notably the largemouth and smallmouth bass, have been very widely introduced throughout the world, and are now considered cosmopolitan. All black bass species are highly sought-after game fish and well known as strong fighters when hooked, and bass fishing is an extremely popular outdoor sport throughout their native range. Their meat is quite edible and firm, although they are not regarded as commercial food fish.

The word panfish, also spelled pan-fish or pan fish, is an American English term describing any edible freshwater fish that usually do not outgrow the size of an average frying pan. It is also commonly used by recreational anglers to refer to any small game fish that can fit wholly into a pan for cooking but are still large enough to be legal. According to the Oxford English Dictionary, the term was first recorded in 1796 in American Cookery, the first known cookbook written by an American author.
