Cheese is a type of dairy product produced in a range of flavors, textures, and forms by coagulation of the milk protein casein. It is composed of proteins and fat from milk, usually of cows, goats or sheep, and sometimes of water buffalo. During production, milk is usually acidified and either the enzymes of rennet or bacterial enzymes with similar activity are added to cause the casein to coagulate. The solid curds are then separated from the liquid whey and pressed into finished cheese. Some cheeses have aromatic molds on the rind, the outer layer, or throughout.

Over a thousand types of cheese exist, produced in various countries. Their styles, textures and flavors depend on the origin of the milk (including the animal's diet), whether they have been pasteurised, the butterfat content, the bacteria and mold, the processing, and how long they have been aged. Herbs, spices, or wood smoke may be used as flavoring agents. Other added ingredients may include black pepper, garlic, chives or cranberries. A cheesemonger, or specialist seller of cheeses, may have expertise with selecting, purchasing, receiving, storing and ripening cheeses.

Lentivirus is a genus of retroviruses that cause chronic and deadly diseases characterized by long incubation periods, in humans and other mammalian species. The genus includes the human immunodeficiency virus (HIV), which causes AIDS. Lentiviruses are distributed worldwide, and are known to be hosted in apes, cows, goats, horses, cats, and sheep as well as several other mammals.

Lentiviruses can integrate a significant amount of viral complementary DNA into the DNA of the host cell and can efficiently infect nondividing cells, so they are one of the most efficient methods of gene delivery. They can become endogenous, integrating their genome into the host germline genome, so that the virus is henceforth inherited by the host's descendants.

The Ig Nobel Prize (/ˌɪɡ nˈbɛl/) is a satirical prize awarded annually since 1991 to promote public engagement with scientific research. Its aim is to "honor achievements that first make people laugh, and then make them think." The name of the award is a pun on the Nobel Prize, which it parodies, and on the word ignoble. Most awards are for genuine scientific achievements with an unorthodox, obvious or humorous slant, while other awards are given ironically to various fraudsters, politicians, media figures, or promoters of pseudoscience.

Organized by the scientific humor magazine Annals of Improbable Research (AIR), the Ig Nobel Prizes are presented by Nobel laureates in a ceremony at the Massachusetts Institute of Technology. Barbacoa, or asado en barbacoa (Spanish: [baɾβaˈkoa] ) in Mexico, refers to the local indigenous variation of the method of cooking in a pit or earth oven. It generally refers to slow-cooking meats or whole sheep, whole cows, whole beef heads, or whole goats in a hole dug in the ground, and covered with agave (maguey) leaves, although the interpretation is loose, and in the present day (and in some cases) may refer to meat steamed until tender. This meat is known for its high fat content and strong flavor, often accompanied with onions and cilantro (coriander leaf). Because this method of cooking was used throughout different regions by different ethnic groups or tribes in Mexico, each had their own name for it; for the Nahuatl it was called nakakoyonki; for the Mayan it was called píib; for the Otomi it was called thumngö.

Similar methods exist throughout Latin America and the rest of the world, under distinct names, including pachamanca and huatia in the Andean region; curanto in Chile and southern Argentina; berarubu in Brazil; cocido enterrado in Colombia; or hāngī in New Zealand.
