Amaranthus is a cosmopolitan group of more than 50 species which make up the genus of annual or short-lived perennial plants collectively known as amaranths. Some names include "prostrate pigweed" and "love lies bleeding". Some amaranth species are cultivated as leaf vegetables, pseudocereals, and ornamental plants.

Catkin-like cymes of densely packed flowers grow in summer or fall. Amaranth varies in flower, leaf, and stem color with a range of striking pigments from the spectrum of maroon to crimson and can grow longitudinally from 1 to 2.5 metres (3 to 8 feet) tall with a cylindrical, succulent, fibrous stem that is hollow with grooves and bracteoles when mature.There are approximately 75 species in the genus, 10 of which are dioecious and native to North America, and the remaining 65 are monoecious species that are endemic to every continent (except Antarctica) from tropical lowlands to the Himalayas. Members of this genus share many characteristics and uses with members of the closely related genus Celosia. Amaranth grain is collected from the genus. The leaves of some species are also eaten.

Amaranth in the context of Cereal

A cereal is a grass cultivated for its edible grain. Cereals are the world's largest crops, and are therefore staple foods. They include rice, wheat, rye, oats, barley, millet, and maize (corn). Edible grains from other plant families, such as amaranth, buckwheat and quinoa, are pseudocereals. Most cereals are annuals, producing one crop from each planting, though rice is sometimes grown as a perennial. Winter varieties are hardy enough to be planted in the autumn, becoming dormant in the winter, and harvested in spring or early summer; spring varieties are planted in spring and harvested in late summer. The term cereal is derived from the name of the Roman goddess of grain crops and fertility, Ceres.

Cereals were domesticated in the Neolithic around 8,000 years ago. Wheat and barley were domesticated in the Fertile Crescent. Rice and some millets were domesticated in East Asia, while sorghum and other millets were domesticated in West Africa. Maize was domesticated by Indigenous peoples of the Americas in southern Mexico about 9,000 years ago. In the 20th century, cereal productivity was greatly increased by the Green Revolution. This increase in production has accompanied a growing international trade, with some countries producing large portions of the cereal supply for other countries.

Amaranth in the context of Quinoa

Quinoa (Chenopodium quinoa; /ˈkn.wɑː, kiˈn.ə/, from Quechua kinwa or kinuwa) is a flowering plant in the amaranth family. It is a herbaceous annual plant grown as a crop primarily for its edible seeds; the seeds are high in protein, dietary fiber, B vitamins and dietary minerals especially potassium and magnesium in amounts greater than in many grains. Quinoa is not a grass but rather a pseudocereal botanically related to spinach and amaranth (Amaranthus spp.), and originated in the Andean region of northwestern South America. It was first used to feed livestock 5,200–7,000 years ago, and for human consumption 3,000–4,000 years ago in the Lake Titicaca basin of Bolivia and Peru.

The plant thrives at high elevations and produces seeds that are rich in protein. Almost all production in the Andean region is done by small farms and associations. Its cultivation has spread to more than 70 countries, including Kenya, India, the United States, and European countries. As a result of increased consumption in North America, Europe, and Australasia, quinoa crop prices tripled between 2006 and 2014, entering a boom and bust cycle.

Celosia (/sˈlʃiə/ see-LOH-shee-ə) is a small genus of edible and ornamental plants in the amaranth family, Amaranthaceae. Its species are commonly known as woolflowers, or, if the flower heads are crested by fasciation, cockscombs. The plants are well known in East Africa's highlands and are used under their Swahili name, mfungu.

Species belonging to the genus Amaranthus have been cultivated for their grains for 8,000 years. Amaranth plants are classified as pseudocereals that are grown for their edible starchy seeds, but they are not in the same botanical family as true cereals, such as wheat and rice. Amaranth species that are still used as a grain are Amaranthus caudatus L., Amaranthus cruentus L., and Amaranthus hypochondriacus L. The yield of grain amaranth is comparable to that of rice or maize.

The grain was a staple food of the Aztecs and an integral part of Aztec religious ceremonies. The cultivation of amaranth was banned by the conquistadores upon their conquest of the Aztec nation. However, the plant has grown as a weed since then, so its genetic base has been largely maintained. Research on grain amaranth began in the United States in the 1970s. By the end of the 1970s, a few thousand acres were being cultivated there, and continue to be cultivated.

Amaranth in the context of Mesoamerican cuisine

Mesoamerican cuisine – (covering Belize, El Salvador, Guatemala, Honduras, Nicaragua, northern Costa Rica and Mexico) has four main staples: maize (many varieties based on what climate it is grown in), beans, squash and chili. Other plant-based foods used include amaranth, avocado, cassava, cherimoya, chia, chocolate, guava, nanche, pineapple, sapodilla, sweet potatoes, yucca and zapote.

Historically, various methods and techniques were employed to store, prepare and preserve the foods, most of which remain in use today. Hernán Cortés introduced rice and wheat to Mesoamerica, prior to which time milpa (known as the cornfield) was one of the main sources of sustenance.
