Herbs are a widely distributed and widespread group of plants, excluding vegetables, with savory or aromatic properties that are used for flavoring and garnishing food, for medicinal purposes, or for fragrances. Culinary use typically distinguishes herbs from spices. Herbs generally refers to the leafy green or flowering parts of a plant (either fresh or dried), while spices are usually dried and produced from other parts of the plant, including seeds, bark, roots and fruits.

Herbs have a variety of uses including culinary, medicinal, aromatic and in some cases, spiritual. General usage of the term "herb" differs between culinary herbs and medicinal herbs; in medicinal or spiritual use, any parts of the plant might be considered "herbs", including leaves, roots, flowers, seeds, root bark, inner bark (and cambium), resin and pericarp.

Herbs in the context of Medicine

Medicine is the science and practice of caring for patients, managing the diagnosis, prognosis, prevention, treatment, palliation of their injury or disease, and promoting their health. Medicine encompasses a variety of health care practices evolved to maintain and restore health by the prevention and treatment of illness. Contemporary medicine applies biomedical sciences, biomedical research, genetics, and medical technology to diagnose, treat, and prevent injury and disease, typically through pharmaceuticals or surgery, but also through therapies as diverse as psychotherapy, external splints and traction, medical devices, biologics, and ionizing radiation, amongst others.

Medicine has been practiced since prehistoric times, and for most of this time it was an art (an area of creativity and skill), frequently having connections to the religious and philosophical beliefs of local culture. For example, a medicine man would apply herbs and say prayers for healing, or an ancient philosopher and physician would apply bloodletting according to the theories of humorism. In recent centuries, since the advent of modern science, most medicine has become a combination of art and science (both basic and applied, under the umbrella of medical science). For example, while stitching technique for sutures is an art learned through practice, knowledge of what happens at the cellular and molecular level in the tissues being stitched arises through science.

Herbs in the context of Polygonum

Polygonum is a genus of about 130 species of flowering plants in the buckwheat and knotweed family Polygonaceae. Common names include knotweed and knotgrass (though the common names may refer more broadly to plants from Polygonaceae). In the Middle English glossary of herbs Alphita (c. 1400–1425), it was known as ars-smerte. There have been various opinions about how broadly the genus should be defined. For example, buckwheat (Fagopyrum esculentum) has sometimes been included in the genus as Polygonum fagopyrum. Former genera such as Polygonella have been subsumed into Polygonum; other genera have been split off.

The genus primarily grows in northern temperate regions. The species are very diverse, ranging from prostrate herbaceous annual plants to erect herbaceous perennial plants.

Ranch dressing is a savory, creamy American salad dressing usually made from buttermilk, salt, garlic, onion, black pepper, and herbs (commonly chives, parsley and dill), mixed into a sauce based on mayonnaise or another oil emulsion. Sour cream and yogurt are sometimes used in addition to, or as a substitute for, buttermilk and mayonnaise.

Ranch has been the best-selling salad dressing in the United States since 1992, when it overtook Italian dressing. It is also popular in the United States and Canada as a dip, and as a flavoring for potato chips and other foods. In 2017, 40% of Americans named ranch as their favorite dressing, according to a study by the Association for Dressings and Sauces. Ranch dressing is most prominently used in the Midwest region.

Herbs in the context of Brining

Brining is treating food with brine or coarse salt which preserves and seasons the food while enhancing tenderness. Flavor can be further developed with additions such as herbs, spices, sugar, caramel or vinegar. Meat and fish are typically brined for less than twenty-four hours while vegetables, cheeses and fruit are brined in a much longer process known as pickling. Brining is similar to marination, except that a marinade usually includes a significant amount of acid, such as vinegar or citrus juice. Brining is also similar to curing, which usually involves significantly drying the food, and is done over a much longer time period.
