Bread may be leavened by naturally occurring microbes (e.g. sourdough), chemicals (e.g. baking soda), industrially produced yeast, or high-pressure aeration, which creates the gas bubbles that fluff up bread. Bread may also be unleavened. In many countries, mass-produced bread often contains additives to improve flavor, texture, color, shelf life, nutrition, and ease of production.

Leavened in the context of East–West Schism

The East–West Schism, also known as the Great Schism or the Schism of 1054, is the break of communion between the Catholic Church and the Eastern Orthodox Church since 1054. A series of ecclesiastical differences, theological disputes and geopolitical tensions between the Greek East and Latin West preceded the formal split that occurred in 1054. Prominent among these were the procession of the Holy Spirit (Filioque), whether leavened or unleavened bread should be used in the Eucharist, iconoclasm, the coronation of Charlemagne as emperor of the Romans in 800, the pope's claim to universal jurisdiction, and the place of the See of Constantinople in relation to the pentarchy.

The first action that led to a formal schism occurred in 1053 when Patriarch Michael I Cerularius of Constantinople ordered the closure of all Latin churches in Constantinople. In 1054, the papal legate sent by Leo IX travelled to Constantinople in order, among other things, to deny Cerularius the title of "ecumenical patriarch" and insist that he recognize the pope's claim to be the head of all of the churches. The main purposes of the papal legation were to seek help from the Byzantine emperor, Constantine IX Monomachos, in view of the Norman conquest of southern Italy, and to respond to Leo of Ohrid's attacks on the use of unleavened bread and other Western customs, attacks that had the support of Cerularius. The historian Axel Bayer says that the legation was sent in response to two letters, one from the emperor seeking help to organize a joint military campaign by the eastern and western empires against the Normans, and the other from Cerularius. When the leader of the legation, Cardinal Humbert of Silva Candida, O.S.B., learned that Cerularius had refused to accept the demand, he excommunicated him, and in response Cerularius excommunicated Humbert and the other legates. According to Kallistos Ware, "Even after 1054 friendly relations between East and West continued. The two parts of Christendom were not yet conscious of a great gulf of separation between them ... The dispute remained something of which ordinary Christians in East and West were largely unaware".

Sacramental bread, also called Communion bread, Communion wafer, Sacred host, Eucharistic bread, the Lamb or simply the host (Latin: hostia, lit.'sacrificial victim'), is the bread used in the Christian ritual of the Eucharist and the body of Christ. Along with sacramental wine, it is one of two elements of the Eucharist. The bread may be either leavened or unleavened, depending on tradition.

Catholic theology generally teaches that at the Words of Institution the bread's substance is changed into the Body of Christ, a process known as transubstantiation. Conversely, Eastern Christian theology generally views the epiclesis as the point at which the change occurs.

Leavened in the context of Lavash

Lavash (Armenian: լավաշ; Persian: نان لواش, romanizednân-e lavâš, lit.'lavash bread'; Azerbaijani: lavaş) is a thin flatbread usually leavened, traditionally baked in a tandoor (tonir or tanoor) or on a sajj, and common to the cuisines of South Caucasus, West Asia, and the areas surrounding the Caspian Sea. Lavash is one of the most widespread types of bread in Armenia, Azerbaijan, Iran, and Turkey. The traditional recipe can be adapted to the modern kitchen by using a griddle or wok instead of the tonir.

In 2014, "Lavash, the preparation, meaning and appearance of traditional bread as an expression of culture in Armenia" was inscribed in the UNESCO Representative List of the Intangible Cultural Heritage of Humanity. In 2016, the making and sharing of flatbread (lavash, katyrma, jupka or yufka) in communities of Azerbaijan, Iran, Kazakhstan, Kyrgyzstan, and Turkey was inscribed on the list as well. Lavash is similar to yufka, but in Turkish cuisine lavash (lavaş) is prepared with a yeast dough while yufka is typically unleavened.

Pita (/ˈpɪtə/ or US: /ˈptə/; Greek: πίτα) or pitta (British English), also known as Arabic bread (Arabic: خبز عربي, romanizedkhubz ʿArabī, Armenian: արաբական հաց, romanizedarabakan hats), Syrian bread, Lebanese bread, kmaj (from the Persian kumaj) and Pide (from Turkish), is a family of yeast-leavened round flatbreads baked from wheat flour, common in the Mediterranean, Middle East, and neighboring areas. It includes the widely known version with an interior pocket. In the United Kingdom, the term is used for pocket versions such as the Greek pita, used for barbecues as a souvlaki wrap. The Western name pita may sometimes be used to refer to various other types of flatbreads that have different names in their local languages, such as numerous styles of Arab khubz ('bread').
