An emulsion is a mixture of two or more liquids that are normally immiscible (unmixable or unblendable) owing to liquid-liquid phase separation. Emulsions are part of a more general class of two-phase systems of matter called colloids. Although the terms colloid and emulsion are sometimes used interchangeably, emulsion more narrowly refers to when both phases, dispersed and continuous, are liquids. In an emulsion, one liquid (the dispersed phase) is dispersed in the other (the continuous phase). Examples of emulsions include vinaigrettes, homogenized milk, liquid biomolecular condensates, and some cutting fluids for metal working.

Two liquids can form different types of emulsions. As an example, oil and water can form, first, an oil-in-water emulsion, in which the oil is the dispersed phase, and water is the continuous phase. Second, they can form a water-in-oil emulsion, in which water is the dispersed phase and oil is the continuous phase. Multiple emulsions are also possible, including a "water-in-oil-in-water" emulsion and an "oil-in-water-in-oil" emulsion.

Emulsion in the context of Photographic emulsion

Photographic emulsion is a light-sensitive colloid used in film-based photography. Most commonly, in silver-gelatin photography, it consists of silver halide crystals dispersed in gelatin. The emulsion is usually coated onto a substrate of glass, films (of cellulose nitrate, cellulose acetate or polyester), paper, or fabric. The substrate is often flexible and known as a film base.

Photographic emulsion is not a true emulsion, but a suspension of solid particles (silver halide) in a fluid (gelatin in solution). However, the word emulsion is customarily used in a photographic context. Gelatin or gum arabic layers sensitized with dichromate used in the dichromated colloid processes carbon and gum bichromate are sometimes called emulsions. Some processes do not have emulsions, such as platinum, cyanotype, salted paper, or kallitype.

Emulsion in the context of Contact print

A contact print is a photographic image produced from film; sometimes from a film negative, and sometimes from a film positive or paper negative. In a darkroom an exposed and developed piece of film or photographic paper is placed emulsion side down, in contact with a piece of photographic paper, light is briefly shone through the negative or paper and then the paper is developed to reveal the final print.

The defining characteristic of a contact print is that the resulting print is the same size as the original, rather than having been projected through an enlarger.

Emulsion in the context of Surfactant

A surfactant is a chemical compound that decreases the surface tension or interfacial tension between two liquids, a liquid and a gas, or a liquid and a solid. The word surfactant is a blend of "surface-active agent", coined in 1950. As they consist of a water-repellent and a water-attracting part, they are emulsifiers, enabling water and oil to mix. They can also form foam, and facilitate the detachment of dirt.

Surfactants are among the most widespread and commercially important chemicals. Private households as well as many industries use them in large quantities as detergents and cleaning agents, but also as emulsifiers, wetting agents, foaming agents, antistatic additives, and dispersants.

Emulsion in the context of Soap

Soap is a salt of a fatty acid (sometimes other carboxylic acids) used for cleaning and lubricating products as well as other applications. In a domestic setting, soaps, specifically "toilet soaps", are surfactants usually used for washing, bathing, and other types of housekeeping. In industrial settings, soaps are used as thickeners, components of some lubricants, emulsifiers, and catalysts.

Soaps are often produced by mixing fats and oils with a base. Humans have used soap for millennia; evidence exists for the production of soap-like materials in ancient Babylon around 2800 BC.

Emulsion in the context of Film base

A film base is a transparent substrate which acts as a support medium for the photosensitive emulsion that lies atop it. Despite the numerous layers and coatings associated with the emulsion layer, the base generally accounts for the vast majority of the thickness of any given film stock. Since the late 19th century, there have been three major types of film base in use: nitrate (until about 1951), acetate, and polyester.

Emulsion in the context of Photographic paper

Photographic paper is a paper coated with a light-sensitive chemical, used for making photographic prints. When photographic paper is exposed to light, it captures a latent image that is then developed to form a visible image; with most papers the image density from exposure can be sufficient to not require further development, aside from fixing and clearing, though latent exposure is also usually present. The light-sensitive layer of the paper is called the emulsion, and functions similarly to photographic film. The most common chemistry used is gelatin silver, but other alternatives have also been used.

The print image is traditionally produced by interposing a photographic negative between the light source and the paper, either by direct contact with a large negative (forming a contact print) or by projecting the shadow of the negative onto the paper (producing an enlargement). The initial light exposure is carefully controlled to produce a grayscale image on the paper with appropriate contrast and gradation. Photographic paper may also be exposed to light using digital printers such as the LightJet, with a camera (to produce a photographic negative), by scanning a modulated light source over the paper, or by placing objects upon it (to produce a photogram).

Emulsion in the context of State function

In the thermodynamics of equilibrium, a state function, function of state, or point function for a thermodynamic system is a mathematical function relating several state variables or state quantities (that describe equilibrium states of a system) that depend only on the current equilibrium thermodynamic state of the system (e.g. gas, liquid, solid, crystal, or emulsion), not the path which the system has taken to reach that state. A state function describes equilibrium states of a system, thus also describing the type of system. A state variable is typically a state function so the determination of other state variable values at an equilibrium state also determines the value of the state variable as the state function at that state. The ideal gas law is a good example. In this law, one state variable (e.g., pressure, volume, temperature, or the amount of substance in a gaseous equilibrium system) is a function of other state variables so is regarded as a state function. A state function could also describe the number of a certain type of atoms or molecules in a gaseous, liquid, or solid form in a heterogeneous or homogeneous mixture, or the amount of energy required to create such a system or change the system into a different equilibrium state.

Internal energy, enthalpy, and entropy are examples of state quantities or state functions because they quantitatively describe an equilibrium state of a thermodynamic system, regardless of how the system has arrived in that state. They are expressed by exact differentials. In contrast, mechanical work and heat are process quantities or path functions because their values depend on a specific "transition" (or "path") between two equilibrium states that a system has taken to reach the final equilibrium state, being expressed by inexact differentials. Exchanged heat (in certain discrete amounts) can be associated with changes of state function such as enthalpy. The description of the system heat exchange is done by a state function, and thus enthalpy changes point to an amount of heat. This can also apply to entropy when heat is compared to temperature. The description breaks down for quantities exhibiting hysteresis.

Latex (pl. latices) is an emulsion (stable dispersion) of polymer microparticles in water. Latices are found in nature, but synthetic latices are common as well.

In nature, latex is found as a milky fluid, which is present in 10% of all flowering plants (angiosperms) and in some mushrooms (especially species of Lactarius). It is a complex emulsion that coagulates on exposure to air, consisting of proteins, alkaloids, starches, sugars, oils, tannins, resins, and gums. It is usually exuded after tissue injury. In most plants, latex is white, but some have yellow, orange, or scarlet latex. Since the 17th century, latex has been used as a term for the fluid substance in plants, deriving from the Latin word for 'liquid'. It serves mainly as defense against herbivores and fungivores.

In engineering, entrainment is the entrapment of one substance by another substance. For example:

  • The entrapment of liquid droplets or solid particulates in a flowing gas, as with smoke.
  • The entrapment of gas bubbles or solid particulates in a flowing liquid, as with aeration.
  • Given two mutually insoluble liquids, the emulsion of droplets of one liquid into the other liquid, as with margarine.
  • Given two gases, the entrapment of one gas into the other gas.
