E numbers, short for Europe numbers, are codes for substances used as food additives, including those found naturally in many foods, such as vitamin C, for use within the European Union (EU) and European Free Trade Association (EFTA). Commonly found on food labels, their safety assessment and approval are the responsibility of the European Food Safety Authority (EFSA). The fact that an additive has an E number implies that its use was at one time permitted in products for sale in the European Single Market; some of these additives are no longer allowed today.

Having a single unified list for food additives was first agreed upon in 1962 with food colouring. In 1964, the directives for preservatives were added, in 1970 antioxidants were added, in 1974 emulsifiers, stabilisers, thickeners and gelling agents were added as well.

An iron oxide is a chemical compound composed of iron and oxygen. Several iron oxides are recognized. Often they are non-stoichiometric. Ferric oxyhydroxides are a related class of compounds, perhaps the best known of which is rust.

Iron oxides and oxyhydroxides are widespread in nature and play an important role in many geological and biological processes. They are used as iron ores, pigments, catalysts, and in thermite, and occur in hemoglobin. Iron oxides are inexpensive and durable pigments in paints, coatings and colored concretes. Gum arabic (gum acacia, gum sudani, Senegal gum and by other names) is a tree gum exuded by two species of Acacia sensu lato: Senegalia senegal, and Vachellia seyal. However, the term "gum arabic" does not indicate a particular botanical source. The gum is harvested commercially from wild trees, mostly in Sudan (about 70% of the global supply) and throughout the Sahel, from Senegal to Somalia. The name "gum Arabic" (al-samgh al-'arabi) was used in the Middle East at least as early as the 9th century. Gum arabic first found its way to Europe via Arabic ports and retained its name of origin.

Gum arabic is a complex mixture of glycoproteins and polysaccharides, predominantly polymers of arabinose and galactose. It is soluble in water, edible, and used primarily in the food industry and soft drink industry as a stabilizer, with E number E414 (I414 in the US). Gum arabic is a key ingredient in traditional lithography and is used in printing, paints, glues, cosmetics, and various industrial applications, including viscosity control in inks and in textile industries.

Potassium chloride (KCl, or potassium salt) is a metal halide salt composed of potassium and chlorine. It is odorless and has a white or colorless vitreous crystal appearance. The solid dissolves readily in water, and its solutions have a salt-like taste. Potassium chloride can be obtained from ancient dried lake deposits. KCl is used as a salt substitute for table salt (NaCl), a fertilizer, as a medication, in scientific applications, in domestic water softeners (as a substitute for sodium chloride salt), as a feedstock, and in food processing, where it may be known as E number additive E508.
