Seafood is any form of sea life regarded as food by humans, prominently including fish and shellfish. Shellfish include various species of molluscs (e.g., bivalve molluscs such as clams, oysters, and mussels, and cephalopods such as octopus and squid), crustaceans (e.g. shrimp, crabs, and lobster), and echinoderms (e.g. sea cucumbers and sea urchins). Historically, marine mammals such as cetaceans (whales and dolphins) as well as seals have been eaten as food, though that happens to a lesser extent in modern times. Edible sea plants such as some seaweeds and microalgae are widely eaten as sea vegetables around the world, especially in Asia.

Seafood is an important source of (animal) protein in many diets around the world, especially in coastal areas. Semi-vegetarians who consume seafood as the only source of meat are said to adhere to pescetarianism.

Food energy is chemical energy that animals derive from food to sustain their metabolism and muscular activity. This is usually measured in joules or calories.

Most animals derive most of their energy from aerobic respiration, namely combining the carbohydrates, fats, and proteins with oxygen from air or dissolved in water. Other smaller components of the diet, such as organic acids, polyols, and ethanol (drinking alcohol) may contribute to the energy input. Some diet components that provide little or no food energy, such as water, minerals, vitamins, cholesterol, and fiber, may still be necessary for health and survival for other reasons. Some organisms have instead anaerobic respiration, which extracts energy from food by reactions that do not require oxygen.

A staple food, food staple, or simply staple, is a food that is eaten often and in such quantities that it constitutes a dominant portion of a standard diet for an individual or a population group, supplying a large fraction of energy needs and generally forming a significant proportion of the intake of other nutrients as well. For humans, a staple food of a specific society may be eaten as often as every day or every meal, and most people live on a diet based on just a small variety of food staples. Specific staples vary from place to place, but typically are inexpensive or readily available foods that supply one or more of the macronutrients and micronutrients needed for survival and health: carbohydrates, proteins, fats, minerals and vitamins. Typical examples include grains (cereals and legumes), seeds, nuts and root vegetables (tubers and roots). Among them, cereals (rice, wheat, oat, maize, etc.), legumes (lentils and beans) and tubers (e.g. potato, taro and yam) account for about 90% of the world's food calorie intake.

Early agricultural civilizations valued the crop foods that they established as staples because, in addition to providing necessary nutrition, they generally are suitable for storage over long periods of time without decay. Such nonperishable foods are the only possible staples during seasons of shortage, such as dry seasons or cold temperate winters, against which times harvests have been stored. During seasons of surplus, wider choices of foods may be available.

A herbivore is an animal anatomically and physiologically evolved to feed on plants, especially upon vascular tissues such as foliage, fruits or seeds, as the main component of its diet. These more broadly also encompass animals that eat non-vascular autotrophs such as mosses, algae and lichens, but do not include those feeding on decomposed plant matters (i.e. detritivores) or macrofungi (i.e. fungivores).

As a result of their plant-based diet, herbivorous animals typically have mouth structures (jaws or mouthparts) well adapted to mechanically break down plant materials, and their digestive systems have special enzymes (e.g. amylase and cellulase) to digest polysaccharides. Grazing herbivores such as horses and cattles have wide flat-crowned teeth that are better adapted for grinding grass, tree bark and other tougher lignin-containing materials, and many of them evolved rumination or cecotropic behaviors to better extract nutrients from plants. A large percentage of herbivores also have mutualistic gut flora made up of bacteria and protozoans that help to degrade the cellulose in plants, whose heavily cross-linking polymer structure makes it far more difficult to digest than the protein- and fat-rich animal tissues that carnivores eat.

Diet (nutrition) in the context of Westernization

Westernization (or Westernisation, see spelling differences), also Europeanisation or occidentalization (from the Occident), is a process whereby societies come under or adopt what is considered to be Western culture, in areas such as industry, technology, science, education, politics, economics, lifestyle, law, norms, mores, customs, traditions, values, mentality, perceptions, diet, clothing, language, writing system, religion, and philosophy. During colonialism it often involved the spread of Christianity. A related concept is Northernization, which is the consolidation or influence of the Global North.

Westernization has been a growing influence across the world in the last few centuries, with some thinkers assuming Westernization to be the equivalent of modernization, a way of thought that is often debated. The overall process of Westernization is often two-sided in that Western influences and interests themselves are joined with parts of the affected society, at minimum, to become a more Westernized society, with the putative goal of attaining a Western life or some aspects of it, while Western societies are themselves affected by this process and interaction with non-Western groups.

Diet (nutrition) in the context of Shell midden

A midden is an old dump for domestic waste. It may consist of animal bones, human excrement, botanical material, mollusc shells, potsherds, lithics (especially debitage), and other artifacts and ecofacts associated with past human occupation.

These features provide a useful resource for archaeologists who wish to study the diets and habits of past societies. Middens with damp, anaerobic conditions can even preserve organic remains in deposits as the debris of daily life are tossed on the pile. Each individual toss will contribute a different mix of materials depending upon the activity associated with that particular toss. During the course of deposition, sedimentary material is deposited as well. Different mechanisms, from wind and water to animal digs, create a matrix which can also be analysed to provide seasonal and climatic information. In some middens individual dumps of material can be discerned and analysed.

In chemistry, particularly in biochemistry, a fatty acid is a carboxylic acid with an aliphatic chain, which is either saturated or unsaturated. Most naturally occurring fatty acids have an unbranched chain of an even number of carbon atoms, from 4 to 28. Fatty acids are a major component of the lipids (up to 70% by weight) in some species such as microalgae but in some other organisms are not found in their standalone form, but instead exist as three main classes of esters: triglycerides, phospholipids, and cholesteryl esters. In any of these forms, fatty acids are both important dietary sources of fuel for animals and important structural components for cells.

Diet (nutrition) in the context of Vitamin

Vitamins are organic molecules (or a set of closely related molecules called vitamers) that are essential to an organism in small quantities for proper metabolic function. These essential nutrients cannot be synthesized in the organism in sufficient quantities for survival, and therefore must be obtained through the diet. For example, vitamin C can be synthesized by some species but not by others; it is not considered a vitamin in the first instance but is in the second. Most vitamins are not single molecules, but groups of related molecules called vitamers. For example, there are eight vitamers of vitamin E: four tocopherols and four tocotrienols.

The term vitamin does not include the three other groups of essential nutrients: minerals, essential fatty acids, and essential amino acids.
