Photosynthesis (/ˌftəˈsɪnθəsɪs/ FOH-tə-SINTH-ə-sis) is a system of biological processes by which photopigment-bearing autotrophic organisms, such as most plants, algae and cyanobacteria, convert light energy — typically from sunlight — into the chemical energy necessary to fuel their metabolism. The term photosynthesis usually refers to oxygenic photosynthesis, a process that releases oxygen as a byproduct of water splitting. Photosynthetic organisms store the converted chemical energy within the bonds of intracellular organic compounds (complex compounds containing carbon), typically carbohydrates like sugars (mainly glucose, fructose and sucrose), starches, phytoglycogen and cellulose. When needing to use this stored energy, an organism's cells then metabolize the organic compounds through cellular respiration. Photosynthesis plays a critical role in producing and maintaining the oxygen content of the Earth's atmosphere, and it supplies most of the biological energy necessary for complex life on Earth.

Some organisms also perform anoxygenic photosynthesis, which does not produce oxygen. Some bacteria (e.g. purple bacteria) uses bacteriochlorophyll to split hydrogen sulfide as a reductant instead of water, releasing sulfur instead of oxygen, which was a dominant form of photosynthesis in the euxinic Canfield oceans during the Boring Billion. Archaea such as Halobacterium also perform a type of non-carbon-fixing anoxygenic photosynthesis, where the simpler photopigment retinal and its microbial rhodopsin derivatives are used to absorb green light and produce a proton (hydron) gradient across the cell membrane, and the subsequent ion movement powers transmembrane proton pumps to directly synthesize adenosine triphosphate (ATP), the "energy currency" of cells. Such archaeal photosynthesis might have been the earliest form of photosynthesis that evolved on Earth, as far back as the Paleoarchean, preceding that of cyanobacteria (see Purple Earth hypothesis).

Jaggery is a traditional non-centrifugal cane sugar consumed in the Indian subcontinent, Southeast Asia, North America, Central America, Brazil and Africa. It is a concentrated product of cane juice and often date or palm sap without separation of the molasses and crystals, and can vary from golden brown to dark brown in colour. It contains up to 50% sucrose, up to 20% invert sugars, and up to 20% moisture, with the remainder made up of other insoluble matter, such as wood ash, proteins, and bagasse fibres. Jaggery is very similar to muscovado, an important sweetener in Portuguese, British and French cuisine.

The blood sugar level, blood sugar concentration, blood glucose level, or glycemia is the measure of glucose concentrated in the blood. The body tightly regulates blood glucose levels as a part of metabolic homeostasis.

For a 70 kg (154 lb) human, approximately four grams of dissolved glucose (also called "blood glucose") is maintained in the blood plasma at all times. Glucose that is not circulating in the blood is stored in skeletal muscle and liver cells in the form of glycogen; in fasting individuals, blood glucose is maintained at a constant level by releasing just enough glucose from these glycogen stores in the liver and skeletal muscle in order to maintain homeostasis. Glucose can be transported from the intestines or liver to other tissues in the body via the bloodstream. Phloem (/ˈfl.əm/, FLOH-əm) is the living tissue in vascular plants that transports the soluble organic compounds made during photosynthesis and known as photosynthates, in particular the sugar sucrose, to the rest of the plant. This transport process is called translocation. In trees, the phloem is the innermost layer of the bark, hence the name, derived from the Ancient Greek word φλοιός (phloiós), meaning "bark". The term was introduced by Carl Nägeli in 1858. Different types of phloem can be distinguished. The early phloem formed in the growth apices is called protophloem. Protophloem eventually becomes obliterated once it connects to the durable phloem in mature organs, the metaphloem. Further, secondary phloem is formed during the thickening of stem structures.

Sugar is the generic name for sweet-tasting, soluble carbohydrates, many of which are used in food. Simple sugars, also called monosaccharides, include glucose, fructose, and galactose. Compound sugars, also called disaccharides or double sugars, are molecules made of two bonded monosaccharides; common examples are sucrose (glucose + fructose), lactose (glucose + galactose), and maltose (two molecules of glucose). White sugar is almost pure sucrose. During digestion, compound sugars are hydrolysed into simple sugars.

Longer chains of saccharides are not regarded as sugars, and are called oligosaccharides or polysaccharides. Starch is a glucose polymer found in plants – the most abundant source of energy in human food. Some other chemical substances, such as ethylene glycol, glycerol and sugar alcohols, may have a sweet taste, but are not classified as sugar.

Sugarcane or sugar cane is a species of tall, perennial grass (in the genus Saccharum, tribe Andropogoneae) that is used for sugar production. The plants are 2–6 m (6–20 ft) tall with stout, jointed, fibrous stalks that are rich in sucrose, which accumulates in the stalk internodes. Sugarcanes belong to the grass family, Poaceae, an economically important flowering plant family that includes maize, wheat, rice, and sorghum, and many forage crops. It is native to New Guinea.

Sugarcane was an ancient crop of the Austronesian and Papuan people. The best evidence available today points to the New Guinea area as the site of the original domestication of Saccharum officinarum. It was introduced to Polynesia, Island Melanesia, and Madagascar in prehistoric times via Austronesian sailors. It was also introduced by Austronesian sailors to India and then to Southern China by 500 BC, via trade. The Persians and Greeks encountered the famous "reeds that produce honey without bees" in India between the sixth and fourth centuries BC. They adopted and then spread sugarcane agriculture. By the eighth century, sugar was considered a luxurious and expensive spice from India, and merchant trading spread its use across the Mediterranean and North Africa. In the 18th century, sugarcane plantations began in the Caribbean, South American, Indian Ocean, and Pacific island nations. The need for sugar crop laborers became a major driver of large migrations, some people voluntarily accepting indentured servitude and others forcibly imported as slaves.
