Coffee production is the industrial process of converting the raw fruit (the coffee cherry) of the coffee plant into finished coffee beans. About eight months after coffee cherries appear on a coffee plant, the cherries are harvested either by hand or by machine. Then they are, depending on the method, pulped and then dried or simply set out to dry. After this, the beans are stripped of their remaining dry skin and fruit residue. Once they are cleaned, sorted, and graded, they are suitable for distribution. While all green coffee, produced from immature coffee beans, is processed, the method that is used to process coffee varies, and significantly affects the flavor of coffee once it is roasted and brewed. Coffee production is a major source of income for 12.5 million households, most in developing countries.

Coffee production in the context of Smallholding

A smallholding or smallholder is a small farm operating under a small-scale agriculture model. Definitions vary widely for what constitutes a smallholder or small-scale farm, including factors such as size, food production technique or technology, involvement of family in labor and economic impact. There are an estimated 500 million smallholder farms in developing countries of the world alone, supporting almost two billion people. Smallholdings are usually farms supporting a single family with a mixture of cash crops and subsistence farming. As a country becomes more affluent, smallholdings may not be self-sufficient. Still, they may be valued for providing supplemental sustenance, recreation, and general rural lifestyle appreciation (often as hobby farms). As the sustainable food and local food movements grow in affluent countries, some of these smallholdings are gaining increased economic viability in the developed world as well.

Small-scale agriculture is often in tension with industrial agriculture, which finds efficiencies by increasing outputs, monoculture, consolidating land under big agricultural operations, and economies of scale. Certain labor-intensive cash crops, such as cocoa production in Ghana or Côte d'Ivoire, rely heavily on smallholders; globally, as of 2008, 90% of cocoa is grown by smallholders. These farmers rely on cocoa for up to 60 to 90 per cent of their income. Similar trends in supply chains exist in other crops like coffee, palm oil, and bananas. In other markets, small scale agriculture can increase food system investment in small holders improving food security. Today, some companies attempt to include smallholdings into their value chain, providing seeds, feed, or fertilizers to improve production.

Coffee production in the context of Toussaint Louverture

François-Dominique Toussaint Louverture (English: /ˌlvərˈtjʊər/ LOO-vər-TURE, French: [fʁɑ̃swa dɔminik tusɛ̃ luvɛʁtyʁ]; 20 May 1743 – 7 April 1803), also known as Toussaint L'Ouverture or Toussaint Bréda, was a Haitian general and the most prominent leader of the Haitian Revolution. During his life, Louverture first fought and allied with Spanish forces against Saint-Domingue Royalists, then joined with Republican France, becoming Governor-General-for-life of Saint-Domingue, and lastly fought against Bonaparte's republican troops. As a revolutionary leader, Louverture displayed military and political acumen that helped transform the fledgling slave rebellion into a revolutionary movement. Along with Jean-Jacques Dessalines, Louverture is now known as one of the "Fathers of Haiti".

Toussaint Louverture was born as a slave in the French colony of Saint-Domingue, now known as Haiti. He was a devout Catholic, and was manumitted as an affranchi (ex-slave) before the French Revolution, identifying as a Creole for the greater part of his life. During his time as an affranchi, he became a salaried employee, an overseer of his former master's plantation, and later became a wealthy slave owner himself; Toussaint Louverture owned several coffee plantations at Petit Cormier, Grande Rivière, and Ennery. At the start of the Haitian revolution he was nearly 50 years old and began his military career as a lieutenant to Georges Biassou, a leader of the preliminary 1791 slave revolt. Initially allied with the Spaniards of neighboring Santo Domingo, Louverture switched his allegiance to the French when the new Republican government moved to abolish slavery in its colonies. As leader of the Haitian Revolution, Louverture gradually established control over the whole island and used his political and military influence to gain dominance over his rivals.

Coffee production in the context of Yauco, Puerto Rico

Yauco (Spanish pronunciation: [ˈʝawko]) is a town and municipality in southern Puerto Rico. Although the downtown is inland, the municipality stretches to a southern coast facing the Caribbean Sea. Yauco is located south of Maricao, Lares and Adjuntas; east of Sabana Grande and Guánica; and west of Guayanilla. The municipality consists of 20 barrios and Yauco Pueblo (the downtown and administrative center of the municipality). It is both a principal town of the Yauco Metropolitan Statistical Area and the Ponce-Yauco-Coamo Combined Statistical Area.

It was founded by Fernando Pacheco on February 29, 1756, and developed for commodity crops of tobacco, sugar cane, and coffee. Yauco became a center for Corsican immigration to Puerto Rico in the 19th century due to its geographical similarity to their homeland. Corsicans have contributed to many areas of life in Yauco, particularly to its coffee industry. This has played a role in the town's nicknames of El Pueblo del Café (Town of Coffee), and residents of the municipality are often referred to as Los Corsos (The Corsicans).
