Rapeseed oil is one of the oldest known vegetable oils. There are both edible and industrial forms produced from rapeseed, the seed of several cultivars of the plant family Brassicaceae (mustards). The term "rapeseed" applies to oilseeds from the species Brassica napus and Brassica rapa, while the term canola refers to specific rapeseed varieties bred to produce oil for use in human and animal foods. In manufacturing, the edible varieties of canola are required to contain less than 2% erucic acid in Canada, the United States, European Union, and many other countries.

Canola is produced as low erucic acid rapeseed (LEAR) oil and is generally recognized as safe (GRAS) by the United States Food and Drug Administration (FDA).

Canola oil in the context of University of Manitoba

The University of Manitoba (U of M, UManitoba, or UM) is a public research university in Winnipeg, Manitoba, Canada. Founded in 1877, it is the first university in Western Canada. Both by total student enrolment and campus area, the University of Manitoba is the largest university in the province of Manitoba. Its main campus is located in the Fort Garry neighbourhood of Winnipeg, with other campuses throughout the city: the Bannatyne Campus, the James W. Burns Executive Education Centre, the William Norrie Centre, and the French-language affiliate, Université de Saint-Boniface in the Saint Boniface ward.

Research at the university contributed to the creation of canola oil in the 1970s. Likewise, University of Manitoba alumni include Nobel Prize recipients, Academy Award winners, Order of Merit recipients, and Olympic medalists. As of 2019, there have been 99 Rhodes Scholarship recipients from the University of Manitoba, more than that of any other university in western Canada.

Brassica (/ˈbræsɪkə/) is a genus of plants in the cabbage and mustard family (Brassicaceae). The members of the genus are informally known as cruciferous vegetables, cabbages, mustard plants, or simply brassicas. Crops from this genus are sometimes called cole crops—derived from the Latin caulis, denoting the stem or stalk of a plant.

The genus Brassica is known for its important agricultural and horticultural crops and also includes a number of weeds, both of wild taxa and escapees from cultivation. Brassica species and varieties commonly used for food include bok choy, broccoli, Brussels sprouts, cauliflower, cabbage, collard greens, choy sum, kale, kohlrabi, napa cabbage, rutabaga, turnip and some seeds used in the production of canola oil and the condiment mustard. Over 30 wild species and hybrids are in cultivation, plus numerous cultivars and hybrids of cultivated origin. Most are seasonal plants (annuals or biennials), but some are small shrubs. Brassica plants have been the subject of much scientific interest for their agricultural importance. Six particular species (B. carinata, B. juncea, B. oleracea, B. napus, B. nigra, and B. rapa) evolved by the combining of chromosomes from three earlier species, as described by the triangle of U theory.
